Abstract
The following work recognizes the potential of typical foods, but also the lack of promoting gastronomic tourism so that products of origin of the department of Huila can be promoted, in which fast food franchise models have reduced the opportunity of value of native foods. As mentioned with the above, an investigation of some aspects of gastronomic tourism is carried out to complement it through mobile architecture as a transformable mobile prototype that adapts to space and needs, which can be dismantled and transported as in the ephemeral architecture, as is the method. Make franchise models in recognition of the typical dishes of the region that address an importance of identity in our country.
