Abstract
There are several companies that, seeking to improve their activities in the supply chain and reduce waste, carry out strategies such as Lean Manufacturing. This philosophy, also known as lean manufacturing, consists of a series of tools such as Kaizen, Kanbam, VSM, among others, which seek the optimization and standardization of processes, however, this requires a high commitment and flexibility to change by part of employees and management. Its implementation can occur within any scope, such as MYPIMES, which due to their size and small budget, in most cases, make their application complex. The purpose of this work is to propose improvements in production operations and in the supply chain, through the Lean philosophy, for the company Natural Foods, SA, dedicated to the marketing and distribution of condiments and nuts, for which the wording of the problem is How the Lean philosophy can improve the production and supply chain operations of Natural Foods? In this regard, the research question is answered by means of a survey applied to the management of the company, which seeks to generate a diagnosis, for the degree of maturity in the application of Lean, which resulted in a basic degree of maturity, evidencing shortcomings in the standardization of work, control of production and management of indicators. Taking these results into account, a dashboard was created for the sales area, which will help to communicate the management objectives and measure and control the processes. From the hand of this matrix, an Excel file was implemented to estimate the monthly demand, through the use of the formula "FORECAST.ETS", the implementation of function manuals for each position was generated and a VSM was identified current and a future one was proposed with the use of Kanban cards, and access to a new sealing machine that allows it to reduce the current takt time. Likewise, the calculation and measurement of logistics KPIs was carried out to control the dispatch and production process, which, together with the previous processes, will be managed by a purchasing analyst; which the company must hire. Finally, an economic viability analysis was made for the possible implementation of the proposal, resulting in a 1.09 profit for each peso invested in the project.
