Abstract
Tamale is a food very present in Colombian gastronomy, and very popular with the population of Tunja since it has always been present as a traditional and typical dish of the region, unfortunately it is not very healthy due to its high content of animal fats that undermine the consumer health.
In this project, a solution to the previously exposed problem is proposed, with the preparation of healthy tamales using low-fat meats, beef, pork, chicken and substituting vegetable for animal fat (bacon, empella). Having this variables on mind, studies are carried out to establish the target audience, determining their preferences regarding the consumption, frequency and variety of tamales from other regions, traditional flavor, quality, nutritional value and hygiene of the process of making and packing tamales, was evaluated through an online survey, which showed that it produced useful results for this research.
There are also financial studies, location of the premises within the city of Tunja to install the tamales production plant, studies related to administrative personnel, trained in the preparation of healthy tamales, among others that go deeper into determining the feasibility of this project. Prices are evaluated on different web pages for the machinery, equipment and utensils that the factory must have for preparing of the tamales.
The objective of this project is the elaboration of tamales in an industrial way that can be consumed immediately, as well as the conservation through refrigeration and freezing for a maximum period of 8 months without losing their value, nutritional and quality just as at the time of preparation and cooking, so that the consumer can take them home and can consume them at the time they want.
