Abstract
The sheet cheese is manufactured in The company "dairy la cascade" located in the municipality of Guican, has an average production of 750 kilos per week of sheet cheese, but does not have the sanitary permits required by INVIMA, however, It benefits more than 200 families in the region, therefore, the project aims to generate a low-cost method that can reduce the bacterial load so that resolution 2674 of 2013 can be complied with.
