Abstract
One of the main problems of small and medium companies in Colombia are ending up disappearing is due to lack of commitment for their own rights, they believe that will never become obsolete in the national market simply because they are the country's own and have been created right there. But, eventually, commerce, an important and essential factor that moves in the world, is carried out in a small business with its high-quality standards in foreigners and its ease of communication. With a small click you can end up getting a quality product from India to the door of your house in no less than 3 days (Portafolio.com, 2018). So, ¿How can we do it? ¿How can we keep small ideas and become stable and strong companies? (Despite many problems of lack of resources and publicity) (Portafolio.com, 2018). In this context, the present project of degree uses the Lean Manufacturing of zero defects in one of the companies of the sector of integral food sector for bakery that at the moment has problems of quality in many of its products and the reason for this is unknown.
